Bedford cured hams are salted exclusively with sea salt and produced using Italian natural maturing processes, which are long and very labour-intensive. This means that our cured hams are particularly mildly salted and contain 30-40% less salt than usual. Our Carat ham has a very special flavour - its natural maturing process takes more than a year, giving it time to fully develop its air-dried cured ham flavour.
